Italian/Mediterranean Corner:

Sautéed Mixed Nuts & Mediterranean Olive Medley:

1 pt. mixed sized green & black olives (Mediterranean mix)
1 pt. mixed whole fancy nuts
1 sprig of rosemary
1 sprig of thyme
Extra virgin olive oil
Dash of coarse salt

Add olives and 2 tbsp of extra virgin olive oil, thyme and rosemary into sauté pan at medium heat. Sauté for approx. 5 min. (until olives are warmed).

In a second sauté pan, add ½ tsp of extra virgin olive oil, 1 sprig of rosemary and 1 sprig of thyme. Heat oil to infuse with the flavor of the herbs. Add the nuts and place in a pre-heated broiler until they begin to brown; toss once and repeat (approx 3 min.) (If you choose you can sauté the nuts until warmed, tossing frequently instead of using the broiler). Finish with a dash of salt if desired.
