Playing with Pita Bread
Pita Bread is one of the most versatile breads around. It is great for people who don’t like thick bread on sandwiches or thick crust on their pizza…in these days of the low carb diet, PITA RULES!

Pita Crisps:

In a large, tall sided sauté pan, place about an inch of Canola oil or any light all vegetable oil (you can use your fryer if you have one, but the sauté pan works well because of its width. Cut pita bread into 2 inch wide pie shaped pieces (like cutting a pizza). Pull the bread apart, so there is only 1 thickness of the bread. When the oil reaches 370 degrees, place the “triangles into the oil. Turn them once and remove them when brown (they cook quickly, about 30 seconds, so be ready!).

Place them on a plate over a double layer of paper towels to drain. Dust the crisps with confectioner’s sugar and serve while warm. If you would like, dust with some cinnamon also. They are great with your favorite dipping sauces!

(TIP: Try some fresh fruits that you mix with some juice and pass through the blender and then flash freeze to a dip consistency)
