Playing with Pita Bread
Pita Bread is one of the most versatile breads around. It is great for people who don’t like thick bread on sandwiches or thick crust on their pizza…in these days of the low carb diet, PITA RULES!

Pita Calzones:

Just slit the edge of the pita wide enough to stuff it with your favorite stuffing and sauce (i.e.: sausage, mozzarella cheese, pepperoni, tomato sauce, etc.) (TIP: heat the calzone slightly in the microwave before placing it in the oven so it heats all the way through), brush lightly with some extra virgin olive oil (or what ever oil or oil spray you have handy) and place in a 400 degree oven for approx 8 minutes. If you want to stick to the ease of pan cooking, cook it the same way as you cooked the pizzas above, making sure it is covered and flip it once to lightly brown both sides.
