Fun Deserts in a Flash

Apple Smoked BBQ Chicken & Apple Sauce:

BBQ Sauce:
In a bowl, mix the following ingredients:

1 cup of catsup
2 tbsp of apple sauce
1 tbsp honey
1 tsp of red wine vinegar
1/3 tsp hot sauce (i.e.: Franks Red Hot)
a dash of liquid smoke (I like hickory, but any will work)
(TIP: take it easy on the smoke, it is strong and too much will make it bitter!)

Zap it in the microwave for about 20 seconds then whisk. Play with your mixture…hotter, sweeter, thicker, more “smoke”, you make the call! (TIP: Don’t like molasses or honey? (give it a try first anyway)…substitute brown sugar and/or maple syrup.)

Chicken:
2 tbs. light olive oil
1 tbs. unsalted butter or margarine
2 – 4 skinless/boneless chicken breasts (or equivalent thighs) (washed, patted dry)
1 cup apple cider
1 pinch of granulated garlic
1 pinch of rosemary
1 pinch sage
1 pinch of thyme
Coarse salt & fresh ground pepper

Melt the butter in sauté or frying pan; add the olive oil. Place chicken breasts and sear both sides (on medium high heat). Once seared (not fully cooked) add apple cider and apple BBQ sauce, herbs (recipe above) and simmer on medium-low heat until the sauce thickens. Chicken will be done when the juices flow clear from the chicken when pierced with a fork. Salt & pepper to taste. Plate chicken, drizzle with BBQ sauce from the pan garnish with apple slices and grated apple. Serve with apple sauce. (Serves 4)
