Fun Deserts in a Flash

Apple Crepes:

Apples:
4 apples of your choice; peeled, cored & cut into 1 inch chunks
¼ cup granulated sugar
tbsp brown sugar
1 tsp balsamic vinegar

Light whipped cream:
Powder cinnamon
Confectioners (powdered) sugar
Sliced apple & mint sprigs for garnish (optional)
1 cup apple cider
3 tbsp unsalted butter

Place the sugar, vinegar, butter and cider into a sauté pan on medium-high heat; simmer and stir until the sauce is well mixed then ad the apples. Cover, reduce heat and simmer until the apples are soft.

Crepes:
Make a standard pancake batter (I use Bisquick to make it easier)…enough for 2 large pancakes. Thin it down by adding apple cider until the mixture is very loose. Lightly butter (or spray with oil) a small to medium fry pan and bring up to temperature on medium-low heat. Pour the pancake batter into the pan in a very thin layer. When lightly brown on the bottom, carefully flip with a large spatula or by loosening the crepe first then placing another equal sized pan over the top and flipping the pans. Remove when the crepe is lightly brown on the other side (I flip the crape right from the pan onto the plate). Place a line of the cooked apples in the center and fold both sides in, drizzle with some more sauce, add a shot of light whipped cream, dust with cinnamon and confectioners sugar. Garnish with apple slices and mint sprigs. (Serves 4)
